Just personal opinion but my feeling is however popular she is on social media, I don't think it translates as well into real life. Reason particularly because she's never been in anything else. Not legitimate collabs, no actual videos or popping up in places, talking, etc. She had one hockey video before with her ex but that's deleted.
She just poses and at most, walks in her reels. I reckon a lot of people who follow her just know of her, they like her post, keep scrolling and thats it because there's nothing else lol. While you have many other models with less followers who would probably get recognised because they do a lot else aside from the pics like Breckie Hill (Not sure if it's a good example) with 1.1m less on IG than her but super well known because she interacts goes on streams, hangs out with other influencers etc.
Add the fact that almost all of her content is at least touched up a bit so wouldn't be surprised basically nobody recognises unless they've seen a lot of her content aside from the usual.

There is the small fact of them following each other on IG. He is the only straight male celebrity she has ever followed on IG (apart from Kurtis till 2022). Bryson, for his part, does not follow any other model or non-golf female celebrity (apart from a few conservative politicians). This alone tells us they are very into each other. Personally I wouldn't need the sightings to conclude they are more than just friends.
We also have her posting, on the day that she was sighted at the LIV final, a set of her excitedly stripping in front of screen showing that very championship. This was the only time her OF posts have ever referenced a real world event, let alone as it happened.
A week later she posts a story from a golfing retreat in the UK, a country she has never before visited or posted anything else from.
Finally, there is more than blonde hair to link mikayla to the woman in the picture. Hairstyle, height, bust size and shape, face shape and bone structure , mouth and even arm shape and posture are similar to Mikayla. Whereas none of his three previous girfriends fits the characteristics of the woman in the clip. Sophia Bertolami's face from some angles looks similar but her face is clearly more elongated. Also her figure is slighter than the woman in the clip.
All of this taken together leaves little basis for reasonable doubt, the more so as there is nothing in the least surprising about them dating.

Your argument that people follow each other on IG for different reasons would be valid if he followed, say, 5 or 10 female models and if she followed a similar number of straight male celebrities. Then you could say it's no big deal that they follow each other. But when (as I have to repeat apparently), she has never followed any other straight male celebrity but him (and Kurtis previously), and he follows no model or non-golfing female Influencer but her, then it clearly is a big deal.
The fact that she filmed in front of LIV but actually posted the set when it was PGA, where she was seen - well obviously it was pre-recorded, so it featured a different golf tournament but it was posted on the pga final day and clearly was referencing the event taking place that day. If you think that was a coincidence, well....
The point about UK is less important although I never saw UK in her IG travel, for example.
