Ive been recently receiving alerts for threads I don't watch and it appears that they're all new threads started by other users.

I looked through my notification settings and I didn't see anything that would indicate me subscribing to these alerts. Am I missing something ?

You might have a section on Watch.
For example I have the Help section set on Watch, so when a new thread is created I get an alert.
Find out which section your alerts are directed to and click Unwatch:
